Super easy curry soup recipe

  • Onions
  • Chopped ginger
  • Curry powder
  • Any healthy veggies (sweets, cauliflower, broccoli, carrots)
  • Coconut milk

Cooking Instructions

  • Sautée onions and ginger in a little oil or just water. Add curry powder until fragrant. Add water. Can add a bouillon cube if you want. Add veggies until just cooked. Add coconut milk at the very end and salt to taste. Don't let the coconut milk boil.

Additional Notes

  • I love the yellow curry powder from Sonoma Spice Queen.
